I learned to cook from this cookbook during my childhood in Puerto Rico. When I went to college my mother bought me this book as a graduation present. It is an invaluable guide to Puertorican cooking. All the basics are in it and more. I recommend this book to anyone who enjoys Puertorican food! He has even done some himself and feels like a great chef. Everything on that book tastes as good as it sounds or better.
It is the BEST of all. I will pass this on to my children when the time comes. However, I wish there were an engilsh translation for it Easy to follow directions, delicious receipes. I have been using this book since It was a gift from my mother in law who was a fantastic cook and whom I kept pestering for receipes as a new bride. It has been my only source for receipes from back home and I continue to pass on these receipes to my children.
I only wish there was a copy in english as some of the terminology and names of foods I am not failiar with. The best. I am a native Puerto Rican but live in Georgia. I truly miss all the authentic flavors from back home and there were a few things that I still had yet to learn. I am so glad that before I moved my grandmother gave me this as a gift because it has ALL the recipes for typical Puerto Rican foods such as Pasteles, Mofongo, Alcapurrias and even desserts like Tembleque.

She would let me read out the ingredients and help. I was so amazed to find on Amazon that I had to buy immediately. I miss the original green cloth-covered version, but the original flavor is all in there. A super gift. A great cookbook. Truly, the essence of Puerto Rico!!!

Not just the best cookbook for Puerto Rican cuisine, it is also practical and every recipe is terrific. I am not hispanic, but I love great food. This cookbook has provided both great recipes and inspiration. Steps are easy to follow; most ingredients are readily available in local stores; results are amazing.
It was the best present I could have received. I learned to cook with it and gave copies to my children as they left the nest. They love Puerto Rican food, especially the food cooked by both their Puerto Rican grandmothers. My granddaughter just got married and among the gifts we gave her was the English version of this book The Art of Puerto Rican Cookery. I will venture to say that there is one copy of this book in almost every Puerto Rican home.

Note however, that this book is entirely in Spanish. A hidden gem in this book is the amazingly simple "yemas reales sabrosas" p. My mother used to bake this cake frequently when I was a kid, and we used to call it "bizcocho de 12 yemas", because the recipe calls for 12 egg yolks and basically this is the only major component apart sugar.

This book has been added to my collection and many of the dishes are similar to the recipes shown on my Cuban Cookbooks. This book contains many different versions of the famous "Flan". This is going to be quite a treat to say the least. When my mother was alive, she used to make "Flan" for me and my kids and we surely miss it!!

I grew up in San Juan; cooking with my grandmother, mom and aunts. Most of the daily staples I learned to cook by doing.
Like many of the other traditional cuisines, each mom has their own version of the recipes. Small variations that make it uniquely their own, although not difference. Good reference book. It is old-fashioned in a good way. It helps me remember a well as give recipes to people.

Published in English as "Puert Rican Cookery. I wanted to cook like my mother and I found this to be the best cookbook to imitate her cooking. It is written in both English and Spanish. You may need to go to an Ethnic store to find them. I used the rub as written in the recipe, omitted the salt from the egg wash, and breaded with dry bread crumbs. I removed it and tented it with foil to allow it to continue cooking and resting for about 15 minutes.
